Chef Johanne Siy opens Aro, a 26-seat restaurant on Mohamed Sultan Road drawing on her Filipino heritage
Chef Johanne Siy has opened her first solo restaurant, Aro, at 15 Mohamed Sultan Road in Singapore, with a 12-course S$268 tasting menu that draws on Philippine produce and her Filipino heritage, which The Business Times called an impressive debut.
Chef Johanne Siy has opened Aro, her own restaurant at 15 Mohamed Sultan Road in Singapore. ELLE Singapore listed the opening among the city's October dining news, and The Business Times has reviewed it as "an impressive one".
Siy's career spans kitchens including Restaurant Andre, Noma and Le Bernardin, according to ELLE. At the 26-seat Aro, her cooking draws on the people and ingredients she has met along the way, including producers across the Philippines, where she grew up. The dining room, designed with Keiji Ashizawa Design, has a 10-seat chef's counter at its centre.
The Business Times said the restaurant is self-funded with help from friends, giving Siy full creative control over a cuisine that "reflects her Filipino heritage, but is not dictated by it". The 12-course, S$268 menu opens with stingless bee honey and includes aligue, a crab-fat dish, a chawanmushi made with the milk of pili nuts, and an ube wagashi for dessert.
Aro is open for lunch and dinner from Thursday to Monday and closed on Tuesdays and Wednesdays, and reservations are required.
