Family-owned Filipino food truck Manila Grill sets up next to the Asda in Dalgety Bay
After two years of festival pop-ups, Neil and Lily Aquino's Manila Grill was set to open as a permanent Filipino food truck next to the Asda in Dalgety Bay on 15 October, offering dishes including Filipino barbecue and lechon kawali, the Dunfermline Press reported.
Manila Grill, a family-owned Filipino food truck run by Neil and Lily Aquino, was set to open on 15 October next to the Asda in Dalgety Bay, the Dunfermline Press reported on 14 October 2026. The paper said the owners are from the Philippines and will bring the cuisine to Fife.
The couple previously ran Ding's Chinese Takeaway in Dingwall for over a decade, before moving to be closer to their daughters who study in Edinburgh, according to the paper. The truck will be located where Greek food van Methos was previously based.
From pop-ups to a permanent truck
The eatery started two years ago with pop-up events, and a permanent food truck was set up after pop-ups at the Dunfermline Food and Drink Festival, The Edinburgh Food & Folk Festival and Glasgow's Barrio Fiesta Festival. Lily told the Dunfermline Press the family also did a 10-day stint at the Edinburgh Fringe, which “confirmed it was a success because we pretty much sold out.”
“My parents wanted to start a business and keep it close to our heritage, so we thought why don't we start this as a pop-up event where we sell grilled Filipino barbecue food?”
On the menu
The paper said authentic Filipino recipes such as lechon kawali, crispy fried pork belly slow cooked for three hours before being deep fried, will be available. Lily said it is served with rice and pickled papaya, with the option of spring rolls, and that she thinks it will probably be the best seller, “but we obviously have two barbecues which perform really well.” She said people who know Filipino foods look for adobo and pancit.
Lily said her dad takes on the marinades for the barbecue, a recipe passed down for generations, and her mum makes the spring rolls by hand. “It's something different and we pride ourselves in ensuring we give good food for an affordable price,” she said.
The food hygiene ratings site foodscores.co.uk lists Manila Grill Food Truck, trading at Fulmar Way, as a mobile caterer with Fife as the local authority, awaiting a food hygiene inspection.
