Filipino restaurant Pamana prepares a second Portland location after its Hoxton brunch success

By Kislap Editorial ·

Chef Ethan Leung and his wife Geri, owners of Filipino restaurant Pamana inside Portland's Hoxton hotel, told What Now they are preparing a second location in the city. They plan a dinner concept at 5424 NE 30th Ave, in the former Expatriate space.

Portland chef Ethan Leung and his wife Geri say opening Pamana, their Filipino restaurant inside The Hoxton hotel, was about celebrating Filipino cuisine and creating a lasting legacy for their family, What Now reported on 2 November. The restaurant is now preparing to open a second location in Portland.

Pamana's website says the name means legacy or heritage in Tagalog. The restaurant describes itself as a restaurant residency inside the Hoxton Hotel in Old Town Chinatown, locally owned by Chef Ethan Leung and his wife, Geri Leung, who are Filipino- and Filipino-Chinese Americans.

From food cart to brick and mortar

According to What Now, Ethan worked as a design engineer before becoming a full-time chef, and developed his skills at several notable restaurants in Seattle. In 2021 the couple launched a Filipino food cart, Baon Kainan. Pamana's website says they closed the cart in July 2025 to start their brick-and-mortar restaurant at the Hoxton, and that in 2021 Baon Kainan was awarded Cart of the Year by The Oregonian and Portland Monthly, as well as Best New Food Cart by Eater PDX.

"It came from wanting to be grounded in something we create. Working on something we created ourselves gave us a sense of stability and a greater sense of purpose."

The couple gave that explanation in an interview with What Now. They told the outlet the response to their brunch menu has been overwhelming, and that it is rewarding when someone tries Filipino food for the first time and loves it.

What's on the menu

Pamana's website says it offers a Filipino brunch menu filled with comforting traditional breakfast staples (silogs, pandesal, lumpia), with early breakfast Monday to Friday from 7 am to 9 am and brunch every day from 9 am to 2 pm. It says it has previously served a Kamayan-style tasting menu.

A second location

What Now reported that the second location will be at 5424 NE 30th Ave, in the former Expatriate space. The couple told the outlet they will focus there on a dinner concept that pairs well with beer, wine and sake, in a much smaller, more intimate space, and that they hope to continue broadening the greater Filipino food narrative. Pamana's website says dinner will return at the new location, opening in late fall at NE 30th and Killingsworth.
