Pampanga restaurants earn their first Michelin Guide recognition in the guide's second Philippine edition
Apag Marangle and Tito Boy won Bib Gourmand distinctions and Mila's Tokwa't Baboy and Souq were named Michelin Selected in the Michelin Guide Manila and Environs & Cebu 2027, a year after the guide's Philippine debut included no Pampanga restaurant.
Pampanga, widely regarded as the culinary capital of the Philippines, has earned its first restaurant listings in the Michelin Guide, ABS-CBN News reported. Apag Marangle in Guagua and Tito Boy in Clark received Bib Gourmand distinctions, while Mila's Tokwa't Baboy in Angeles City and Souq in San Fernando were included in the Michelin Selected category. The selection was revealed on Thursday 29 October at the Michelin Guide Ceremony 2027 at the Manila Marriott Hotel in Newport World Resorts, Pasay City, where Tito Boy restaurant manager Clyde Joshua Zafra also received the Michelin Service Award.
How the Michelin Guide came to the Philippines
Michelin is a French tyre company that introduced the Michelin Guide in 1900 to support the growth of automobile mobility, GMA News noted. The guide's first Philippine selection, the 2026 MICHELIN Guide Manila and Environs & Cebu, was unveiled on Thursday 30 October 2025 at the Manila Marriott Hotel within Newport World Resorts. According to Michelin, that debut edition listed 108 establishments, with 90 restaurants in Manila and its environs and 18 in Cebu: one Two MICHELIN Star restaurant, eight One MICHELIN Star restaurants, 25 Bib Gourmand and 74 MICHELIN Selected. Helm, Chef Josh Boutwood's restaurant in Manila, received the sole two stars. The launch also included one Green Star restaurant and three special awards for Young Chef, Service and Exceptional Cocktail.
"We are honored to present the first edition of the MICHELIN Guide in the Philippines," Gwendal Poullennec, International Director of the MICHELIN Guides, said at the time. Yet not a single Pampanga-based restaurant was included in any category of that debut, radar reported. The omission drew criticism from some quarters, with questions raised over the absence of a province so closely associated with the country's food culture.
A year later, the second edition has made room for the province. According to radar, the Manila and Environs & Cebu 2027 edition features 127 restaurants: 86 Michelin Selected establishments, 31 Bib Gourmand recipients and 10 Michelin-starred restaurants, nine with one star and one with two. No Philippine restaurant received three stars. Philstar Life said the establishments span Metro Manila, Cavite, Cebu and Pampanga. Inspectors assess restaurants on five criteria: quality of ingredients, mastery of cooking techniques, harmony of flavours, the personality of the cuisine, and consistency across the menu and over time. The Bib Gourmand recognises restaurants that "serve exceptional food at great value", while Michelin Selected restaurants "aren't yet at the level of a Star or Bib Gourmand, but still provide a great dining experience".
| Restaurant | Location | 2027 distinction |
|---|---|---|
| Apag Marangle | Guagua, Pampanga | Bib Gourmand |
| Tito Boy | Clark Freeport Zone, Pampanga | Bib Gourmand, plus the Michelin Service Award for manager Clyde Joshua Zafra |
| Mila's Tokwa't Baboy (San Andres) | Angeles City, Pampanga | Michelin Selected |
| Souq | San Fernando, Pampanga | Michelin Selected |
The two Bib Gourmand winners
Apag Marangle, whose name roughly translates to "a meal in the countryside" according to Philstar Life, champions everyday Kapampangan cooking. Its main branch is on Jose Abad Santos Avenue in the Dalan Betis area of Guagua. The guide describes a "warm, inviting nature-inspired interior" and a leaf-shaped menu of more than 70 dishes made with top-drawer local ingredients and house-made condiments, singling out the fermented rice and shrimp dip for its "savoury depth" and the leche flan as "the perfect finish to your meal". "Kapampangan home flavors. Lutong bahay talaga. Very simple, very traditional," Chef Manuela Cherry Pasion Tan told ABS-CBN News at the ceremony. For co-owner Mark Navarro, preserving the authenticity of Pampanga's cuisine has always been at the heart of the restaurant: "The goal when we started the restaurant was to feed our children yung mga kinakain namin."
Tito Boy, in the Clark Freeport Zone, is built around a simple question: what would you serve if a friend came over for a meal? "When we started, I told my wife why don't we make a character named Tito Boy and if he has bisita coming, what would he cook for you," Chef Bong Sagmit told ABS-CBN News, calling it "comfort food rooted with Filipino heritage". The menu runs from crispy pata to sisig croquettes. The guide compares the room to a "buzzy neighbourhood bar" with music from the 1970s, notes a kitchen anchored in European techniques, and highlights a tuna crudo with soy-marinated tapioca pearls. Zafra's Service Award cited his "confident leadership, thoughtful recommendations, and genuine warmth" in guiding a young service team. "We will continue to do what we do. Hindi lang ito sa akin. Sa buong team," he said.
The Michelin Selected picks
Mila's Tokwa't Baboy on San Andres Street in Angeles City started as a neighbourhood sari-sari store run by Mila and Ruben Gomez, GMA News reported. When customers stopping by for cold drinks asked for a quick pulutan, Ruben tweaked a local recipe of fried tofu, pig ears, onions, celery and a calamansi-soy dressing. The guide calls it "the quintessence of home-from-home" and recommends its sizzling sisig. On Facebook, the restaurant said it was "deeply honored and humbled", adding: "What started as a modest dream in 1986 has reached international recognition." Souq in San Fernando is housed in an old warehouse, according to Philstar Life, and gives Filipino family favourites a contemporary twist; the guide highlighted its lechon paksiw, its "unfussy welcome" and "generous portions" ideal for sharing.
Radar counted a fifth Kapampangan establishment in the 2027 edition: the Taguig branch of Abé, a Michelin Selected restaurant decorated with paintings and photographs by artist-writer Emilio "Abé" Aguilar Cruz. The Department of Tourism's Region III office marked the province's entry by saluting the chefs, restaurateurs, service professionals and teams "who continue to bring local cuisine to the table and share a taste of Central Luzon with the world".
